Wing bolts, in this case I glued a wire cir-clip around the bolts so that they can't separate from the bracket. Sometimes I use fuel tubing. You were lucky not to encounter issues with: unbalanced prop, poor quality ESC (mine failed on landing from the maiden), and not centered aileron servos. None of these are deal breakers, and are easy to fix.
What do we think about the roll rate with the slats on?

All of you guys on the pod cast are using fpv for profit and its makes sense for commercial people that would be flying in a city or over a crowd to have a license.
Also the weather thing is relevant for commercial since you would be flying in all kinds of weather since this is tied to a contract for pay.
The hobbyists do not need to get a license.
